Tips & Tricks (5)
- Bloom Your Spices in Coffee ☕Dissolve the ground spices (nutmeg, cinnamon, cloves) in the warm coffee before mixing into your dough to intensify their flavors and ensure even distribution throughout every cookie.
- Chill Dough for Easier Shaping 🧊Refrigerate your dough for at least 2 hours before rolling into balls—this prevents sticking and helps the cookies maintain their spherical shape while baking rather than spreading.
- Two-Stage Baking for Perfect Texture 🍪Bake at 375°F for 12-14 minutes until crispy, then store in an airtight container with a slice of bread for 2-3 days to allow the cookies to soften into that signature tender-chewy texture.
- Anise Extract Goes Last 🌟Add anise extract in the final 30 seconds of mixing to preserve its delicate licorice flavor—early mixing causes it to volatilize and lose its aromatic quality.
- Powdered Sugar Coating Hack ✨Coat warm cookies immediately after baking while still slightly sticky, then re-coat after they cool for a thick, luxurious sugar shell that adheres perfectly.
