Low-Calorie Gingerbread Banana Bread

Preheat the oven to 360°F (180°C) convection or 400°F (200°C) top/bottom heat.

Peel the bananas and place them in a mixing bowl. Mash them with a fork. Add the yogurt and applesauce and mix briefly. Separate the eggs, adding the yolks to the batter and beating the whites in a separate bowl until stiff peaks form, and set aside.

Add the remaining ingredients to the batter and mix with a hand mixer. Gently fold in the beaten egg whites, then pour the batter into a silicone loaf pan. If you’re not using a silicone pan, lightly grease the pan with butter or coconut oil, or line it with parchment paper.

Bake the banana bread for 35–40 minutes, or until a toothpick inserted in the center comes out clean. Remove the bread from the oven, let it cool briefly, then turn it out of the pan and let it cool completely on a wire rack.
