Gingerbread Blondies

One of the best things about these gingerbread blondies is that they're a one-bowl wonder! The entire recipe can be made in one bowl, so they're quick to make and require less clean-up! On top of the ease & simplicity of this recipe, these bars are seriously delicious. They're chewy and full of all the warm spices!

Ingredients

  • ¾ cup - unsalted butter
  • 1 cup - dark brown sugar
  • ⅓ cup - molasses
  • 1 - egg
  • 1 - egg yolk
  • 1 tsp - vanilla paste
  • 2 ¼ cups - all-purpose flour
  • ½ tsp - baking soda
  • 2 teaspoons - cinnamon
  • 2 teaspoons - ginger
  • ½ tsp - cloves
  • ¼ tsp - nutmeg
  • ¼ tsp - allspice
  • ¼ tsp - salt
  • ½ cup - white chocolate

Instructions

  1. Preheat the oven to 350 degrees F (180 degrees C) and line a 9x9 pan with parchment paper.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter and sugar together for 2-3 minutes until light and fluffy.
  3. Mix in the molasses until fully combined.
  4. Then, beat in the egg, egg yolk, and vanilla.
  5. Add in the flour, baking soda, spices, and salt. Stir the dry ingredients a little on top of the wet ingredients just to make sure the baking soda doesn't stay in one clump.
  6. Mix everything on low speed until just combined. Do not over-mix!
  7. Transfer the batter to the prepared pan and spread into an even layer.
  8. Bake the blondies for 20-25 minutes until set and golden.
  9. Remove the blondies from the pan and place on a wire rack to cool completely.
  10. If desired, melt the white chocolate in the microwave in 20 second intervals and drizzle over the blondies.
  11. Cut into 16 squares and enjoy!
