Instructions
1

Preheat the oven to 375°F.
2
|
Line a large baking sheet with parchment paper. Set aside.
3
|
Season the chicken tenders with the salt and pepper.
4
|
Place the gluten-free flour in a medium bowl. In a second bowl, whisk the egg until smooth. In a third bowl, combine the crushed corn flakes and salt.
5
|
Coat a chicken tender thoroughly in flour, then dip it in the beaten egg. Place tender in bowl of corn flakes, and turn it until evenly coated. Transfer to the prepared baking sheet. Repeat the process with the remaining chicken.
6
|
Spray the chicken tenders liberally on one side with canola oil cooking spray.
7
|
Bake the chicken tenders on middle rack of oven until they are beginning to brown, 13-15 minutes.
8
|
Flip the tenders and spray once more with the cooking spray. Continue baking until crust is golden and crispy and chicken is cooked through, 12-15 minutes
9
|
Check to see that chicken tenders are done. Remove from oven or add time as needed.
10
|
Allow chicken tenders to cool slightly. Transfer to a plate and serve immediately.

Tips & Tricks (5)
- Cereal Crunch Technique 🥣Crush corn flakes very finely and evenly for a uniform, extra-crispy coating that adheres perfectly to the chicken tenders.
- Gluten-Free Flour Trick 🌾Sift the gluten-free flour before coating to prevent clumping and ensure a smooth, even breading that won't fall off during cooking.
- Egg Wash Secret 🥚Add a tablespoon of water to your beaten egg to create a lighter, more effective binding layer for the breading.
- Baking Spray Hack 🧴Use a wire rack on your baking sheet and spray both the rack and tenders with canola oil to achieve maximum crispiness on all sides.
- Temperature Precision 🌡️Ensure chicken tenders reach an internal temperature of 165°F for food safety while maintaining maximum juiciness.
