  •  cup - melted coconut oil
  • 2  - eggs
  • ¾ cup - maple syrup
  • ¼ cup - unsweetened almond milk
  • 2 teaspoons - vanilla extract
  • 1 ¼ cups - oat flour
  • 1 cup - almond flour
  • 1 tsp - baking powder
  • ½ tsp - baking soda
  • ¼ tsp - salt
  • 1 cup - carrot
  • 1 cup - apple
  •  cup - unsweetened shredded coconut
  •  cup - raisins
  •  cup - chopped pecans

  1. Preheat the oven to 400 degrees and line standard muffin pan with paper liners.
  2. In a large bowl, whisk the oil, eggs, maple syrup, milk and vanilla until combined.
  3. Add the oat flour, almond flour, baking powder, baking soda and salt to the wet ingredients and whisk well until incorporated and no lumps remain. Stir in the carrot, apple, coconut and raisins.
  4. Divide the batter evenly between the (12) muffin cups and top with additional shredded coconut (if using) and pecans.
  5. Bake for 15-17 minutes or until set and a toothpick inserted into the middle of a muffin comes out with just a few crumbs. Cool in the pan on a wire rack for 10 minutes, then remove from the pan and cool completely. Enjoy!
