Gluten Free Peanut Butter Blossoms

These gluten free peanut butter blossoms are soft, gooey and delicious! This quick and easy recipe takes less than 30 minutes total. These cookies feature a soft baked peanut butter cookie rolled in sugar and creamy Hershey’s kiss. They are great for Christmas, holidays, family parties, birthdays and more!

  • ½ cup - unsalted butter
  • ½ cup - granulated sugar
  • ½ cup - light brown sugar
  • ½ cup - all natural creamy peanut butter
  • 1  - egg
  • 1 ½ cups - gluten free 1-1 flour
  • 1 tsp - baking powder
  •   - sugar
  • 14  - Hershey's kisses

  1. First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
  2. In the bowl of a stand mixer, add room temperature butter, sugar, brown sugar and peanut butter. Mix on high until no clumps of butter remain, about 2 minutes.
  3. Add in the egg. Mix to combine.
  4. Then, add in gluten free flour and baking powder. Mix to combine.
  5. Roll out balls of dough about 1.5 inches in diameter. Add granulated sugar to a small shallow bowl.
  6. Roll each ball of dough until fully coated in sugar. Place on pan.
  7. Bake cookies for 11 to 12 minutes or until edges are set and middles look slightly gooey.
  8. Once cookies come out of the oven, place a Hershey's kiss in the middle of each cookie.
  9. Finally, allow cookies to cool for 5 minutes before carefully moving to a cooling rack.
