Ingredients

  • 6 tablespoons - unsalted butter
  • 10 ounces - mini marshmallows
  • ½ tsp - pure vanilla extract
  • 4 cups - gluten free rice cereal

Instructions

  1. First, line a 9 inch by 9 inch square pan with parchment paper.
  2. In a large skillet or pot, add the butter over low medium heat.
  3. Once the butter has melted, add in the mini marshmallows. Consistently stir until the marshmallows have melted.
  4. Then, turn off the heat. Add in the vanilla extract and rice cereal. Stir until all of the cereal is completely coated in the marshmallow mixture.
  5. Use a spatula to transfer into the prepared pan. Gently pat down into one even layer.
  6. Allow the bars to set for 30 minutes before slicing into. To speed this up, feel free to chill in the fridge.
  7. Finally, use a large sharp knife to carefully cut into bars!
