Ingredients
- 6 tablespoons - unsalted butter
- 10 ounces - mini marshmallows
- ½ tsp - pure vanilla extract
- 4 cups - gluten free rice cereal
Instructions
- First, line a 9 inch by 9 inch square pan with parchment paper.
- In a large skillet or pot, add the butter over low medium heat.
- Once the butter has melted, add in the mini marshmallows. Consistently stir until the marshmallows have melted.
- Then, turn off the heat. Add in the vanilla extract and rice cereal. Stir until all of the cereal is completely coated in the marshmallow mixture.
- Use a spatula to transfer into the prepared pan. Gently pat down into one even layer.
- Allow the bars to set for 30 minutes before slicing into. To speed this up, feel free to chill in the fridge.
- Finally, use a large sharp knife to carefully cut into bars!
