Grandma’s Zucchini Cookies

My Grandma’s Zucchini Cookies are one of my favorite and most prized recipes ever. They have the best texture and just a hint of cinnamon and chocolate with raisins to really amp up the flavor. The cookies are soft and it’s a great recipe to try instead of regular zucchini bread.

Ingredients

  • 2 cups - Flour
  • 1 tsp - Baking soda
  • 1 tsp - Cinnamon
  • ½ tsp - Salt
  • ½ cup - Butter
  • 1 cup - Granulated sugar
  • 1 - Egg
  • 1 cup - Zucchini
  • 1 cup - Golden raisins
  • 1 cup - Pecans
  • 1 cup - Semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350℉.
  2. Grease baking sheets or line with parchment paper
  3. Combine flour, baking soda, cinnamon and salt in a medium bowl.
  4. In a large bowl, beat butter and sugar with a mixer on medium speed until light and fluffy. Add egg and beat well.
  5. Gradually add flour mixture and beat until smooth. The dough will be stiff.
  6. Stir in zucchini and remaining ingredients.
  7. Drop by heaping teaspoonfuls, 2 inches apart onto baking sheets.
  8. Bake 13-15 minutes or until lightly browned. Be careful not to over-bake.
  9. Cool for 2 minutes then remove to cooling racks.
