Ingredients

  • 15 ounces - Chickpeas
  • ½ cup - Mini sweet peppers
  • ¼ cup - Olives
  • 1 cup - Cucumber
  • 1 cup - Cherry tomatoes
  • ¼ cup - Red onion
  • 7 ounces - Feta cheese
  • 3 tablespoons - Olive oil
  • 2 tablespoons - Red wine vinegar
  • 1 ½ teaspoons - Oregano
  • 1 tbsp - parsley
  • 2 teaspoons - garlic
  • ¼ tsp - Salt and pepper

Instructions

  1. In a large mixing bowl, blend together the chickpeas, sweet peppers, olives, cucumbers, tomatoes and red onion.
  2. In a smaller bowl, whisk together the vinaigrette ingredients until well combined.
  3. Top the salad with the block of feta cheese, and pour the vinaigrette over the ingredients before serving.
