Ingredients
- 15 ounces - Chickpeas
- ½ cup - Mini sweet peppers
- ¼ cup - Olives
- 1 cup - Cucumber
- 1 cup - Cherry tomatoes
- ¼ cup - Red onion
- 7 ounces - Feta cheese
- 3 tablespoons - Olive oil
- 2 tablespoons - Red wine vinegar
- 1 ½ teaspoons - Oregano
- 1 tbsp - parsley
- 2 teaspoons - garlic
- ¼ tsp - Salt and pepper
Instructions
- In a large mixing bowl, blend together the chickpeas, sweet peppers, olives, cucumbers, tomatoes and red onion.
- In a smaller bowl, whisk together the vinaigrette ingredients until well combined.
- Top the salad with the block of feta cheese, and pour the vinaigrette over the ingredients before serving.
