Ingredients

  • 2 tablespoons - olive oil
  • 1 - shallot
  • 4 cloves - garlic
  • 28 ounces - whole or diced tomatoes
  • 1 - lemon
  • 1 tsp - dried oregano
  • 1 pinch - chili flakes
  • 1 tsp - salt
  • black pepper
  • 1 ½ pounds - shrimp
  • 4 ounces - feta cheese
  • parsley
  • French bread

Instructions

  1. Preheat oven to 400 degrees. Heat a large oven proof saute pan over low to medium heat and sauté the shallot for 3 minutes or until they start to soften. Add the garlic and sauté another minute.
  2. Add the tomatoes plus juice, lemon juice, zest, oregano, chili flakes, salt, pepper and increase the heat to medium for 10 minutes or until liquid begins to cook down and evaporate.
  3. Add the shrimp into the sauce, sprinkle with feta cheese and place into the oven for 10 minutes or until the shrimp are pink and cooked through. Turn the heat to broil and cook an additional minute or until the feta becomes slightly golden.
  4. Sprinkle with parsley and served with good bread to sop up the sauce.
