Ingredients
- ⅓ cup - fresh lime juice
- ⅓ cup - olive oil
- ½ cup - cilantro
- ¼ tsp - ground cumin
- 3 cloves - garlic
- ¾ tsp - salt
- ½ tsp - black pepper
- 2 pounds - boneless skinless chicken thighs
Instructions
- Whisk together the lime juice, olive oil, cilantro, garlic, cumin, salt and pepper in a large mixing bowl.
- Add the chicken thighs and toss until well coated. Cover with plastic wrap and marinate in the refrigerator for a minimum of 2 hours or overnight.
- Remove the chicken from the refrigerator about 30 minutes prior to cooking it so bring to room temperature.
- Preheat a grill to medium-high heat (about 425 degrees) and oil the grates to prevent the chicken from sticking.
- Remove the chicken from the marinade and let the excess drip off for a few seconds (or lightly shake it off). Grill the chicken for 5–7 minutes per side until nicely charred and a meat thermometer inserted into the thickest part of the thigh registers 175 degrees. Remove from heat, cover loosely with foil, and allow to rest for 5-10 minutes before serving. Enjoy!
