Instructions
1
Place the chicken breasts in a zip top bag, release the air and seal, then pound to 1/2"-3/4" thickness. Season well with salt and pepper.
2
In a small bowl, whisk the tequila, lime juice, olive oil, garlic powder, cumin and smoked paprika until combined. Pour the marinade over the chicken and massage into the chicken. Marinate in the refrigerator for a minimum of 2 hours or overnight. Remove the chicken from the refrigerator 1-2 hours prior to cooking to bring to room temperature.
3
Preheat the grill to medium heat. Grill for 6-8 minutes on the first side until grill marks form, then turn and cook another 6-8 minutes or until the internal temperature reaches 165 degrees.
4
Remove from heat and cover loosely with foil for 5-10 minutes to allow the juices to redistribute before serving.

Tips & Tricks (5)
- Marinate for Maximum Flavor 🍋Marinate the chicken for 4-6 hours (or overnight) to allow the tequila and lime to penetrate deeply, creating incredibly tender and flavorful meat that stays juicy on the grill.
- Pat Dry Before Grilling 🔥Remove excess marinade and pat the chicken completely dry with paper towels before grilling to achieve a beautiful golden crust and proper caramelization.
- Pound for Even Cooking 🔨Gently pound chicken breasts to uniform ¾-inch thickness to ensure even cooking throughout and prevent dry edges while the center cooks through.
- Oil the Grill, Not Just the Chicken 🛢️Use high-heat oil like avocado oil to coat your grill grates right before cooking to prevent sticking and create better grill marks that lock in moisture.
- Rest and Reserve Marinade 🥄Let cooked chicken rest for 5 minutes, then brush with reserved (uncooked) marinade as a finishing glaze to add a fresh burst of tequila-lime flavor without overcooking the meat.
