Ingredients

  • 3 - russet, baking potatoes
  • 2 tablespoons - olive oil
  • 2 teaspoons - kosher salt

Instructions

  1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
  2. Cut potatoes in half lengthwise. Place cut-side up on baking sheet and drizzle with olive oil. Sprinkle on kosher salt.
  3. Use your hands to rub the salt and oil all over the potato halves, then place cut-side down on the baking sheet.
  4. Bake in preheated oven for 30 to 35 minutes, using a fork to poke through the skin to check for doneness. Let cool for a few minutes, and flip over with a spatula.
