Tips & Tricks (5)
- Maximize Ham Dripping Flavor 🍖Don't discard the browned bits stuck to the bottom of your roasting pan—deglaze with a splash of stock or water while making gravy to capture every ounce of deep, savory ham flavor.
- Create a Perfect Roux Foundation 🥄Cook your butter and flour together for 1-2 minutes over medium heat, stirring constantly, before adding liquid to eliminate raw flour taste and ensure a silky-smooth gravy with no lumps.
- Balance Your Seasoning Blend 🧂Add your all-purpose seasoning blend gradually and taste as you go, since ham drippings are already quite salty—you can always add more, but you cannot remove excess seasoning.
- Achieve Restaurant-Quality Texture 🥛Slowly whisk in half and half rather than pouring it all at once, allowing each addition to fully incorporate and create an ultra-creamy consistency without breaking or separating.
- Perfect Timing for Service ⏱️Make your gravy just 10-15 minutes before serving to keep it at the ideal warm temperature and consistency—gravy thickens as it cools, so reheating gently with a splash of cream restores perfect pourable texture.
