Tips & Tricks (5)
- Maximize Ham Drippings 🍖Don't discard the browned bits stuck to the pan—deglaze with a splash of broth or wine to dissolve them and intensify your gravy's depth of flavor.
- Perfect Your Roux Ratio 🥄Use equal parts butter and flour (typically 2 tablespoons each per cup of liquid) and cook the roux for 1-2 minutes to eliminate raw flour taste while avoiding lumps.
- Temper the Half and Half 🥛Warm your half and half separately before whisking it into the hot roux to prevent curdling and ensure a silky, smooth final texture.
- Taste and Season Strategically 👅Since ham drippings are already salty, add your all-purpose seasoning blend gradually and taste between additions to avoid over-seasoning your gravy.
- Achieve Ideal Consistency 🎯If your gravy is too thick, whisk in additional half and half one tablespoon at a time; if too thin, make a small slurry of flour and cold water and stir it in.
