Tips & Tricks (5)
- Banana Ripeness is Critical 🍌Use bananas with brown spots and a soft texture—they contain more natural sugars and pectin, creating maximum moisture and sweetness without requiring additional refined sugar.
- Don't Overmix the Batter 🥣Fold ingredients together gently until just combined; overmixing develops gluten and creates a dense, tough crumb instead of the desired soft and fluffy texture.
- Mash Bananas to Perfect Consistency 🔨Leave small chunks in your mashed bananas rather than pureeing completely—this creates pockets of intense banana flavor and improves the bread's overall texture.
- Let Batter Rest Before Baking ⏱️Allow the mixed batter to sit for 5 minutes before pouring into the pan; this lets the leavening agents activate properly and ensures an even, fluffy rise.
- Coconut Oil Temperature Matters 🥥Use melted but slightly cooled coconut oil (not piping hot) to prevent cooking the eggs and maintain an even distribution throughout the batter for consistent moisture.
