Delightfully moist, sweet, and fluffy blueberry muffins that get a protein boost from cottage cheese, healthy unsaturated fats from canola oil, and extra fiber from whole wheat flour. At the same time, they use very little sugar. You can make these healthy muffins with either fresh or frozen blueberries.

Preheat oven to 180°C fan-forced (200°C conventional). Place muffin cups in the muffin tin.

Blend cottage cheese and banana in a blender or with an immersion blender until smooth. Place the eggs, sugar, oil, and vanilla extract in a bowl with the cottage cheese and banana puree. Wash the lemon thoroughly and finely grate about ¼ of the zest. Add the zest to the liquid ingredients and mix with a whisk or hand mixer.

Add wholemeal flour, salt and baking powder and briefly stir into the liquid ingredients with a spatula or whisk until all ingredients have combined to form a dough.

Wash the blueberries and gently fold them into the batter. (If using frozen blueberries, fold them into the batter while still frozen.)

Divide the batter evenly among twelve muffin cups. Bake the muffins for 20 to 22 minutes at 180°C (350°F) in a convection oven until golden brown on top and a toothpick inserted into the center comes out clean.

Remove the muffins from the oven and let them cool completely.
