Granola With Less Sugar and Oil

This healthy homemade granola is made with less oil and sweetener without sacrificing crunch. The secret is whipped egg white, which binds the oats and nuts into crispy clusters while keeping the recipe lighter than traditional granola. Enjoy it with fresh fruit, yogurt or milk.

Ingredients

  • 2 tablespoons - egg white
  • 1 cup - rolled oats
  • ⅔ cup - mixed nuts
  • 4 tablespoons - flaxseed
  • 1 tsp - cinnamon
  • 4 tablespoons - agave syrup
  • 1 tbsp - vegetable oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roughly chop the nuts. In a large bowl, combine the nuts with the rolled oats, flaxseed, and cinnamon.
  3. In a separate bowl, whip the egg white (or aquafaba) until stiff peaks form.
  4. Stir the agave syrup and oil into the dry ingredients. Gently fold in the whipped egg white until everything is evenly combined.
  5. Spread the granola mixture in an even layer on a parchment-lined baking sheet. Bake for 10 minutes, then carefully flip the granola with a spatula. Continue baking for another 8 to 10 minutes, until golden brown.
  6. Remove the granola from the oven and let it cool completely on the baking sheet. Don't worry if it still seems slightly soft—it will crisp up as it cools. Once completely cool, transfer it to an airtight container for storage.
