Instructions

Preheat the oven to 170°C (340°F) fan / 190°C (375°F) conventional.

Roughly chop the nuts and mix them with wheat bran, rolled oats, flaxseed, and cinnamon in a large bowl.

Whip the egg white (or aquafaba) in a separate bowl until stiff peaks form.

Stir the agave syrup and coconut oil into the dry ingredients, then gently fold in the whipped egg white.

Spread the granola mixture onto a baking sheet lined with parchment paper, smoothing it as evenly as possible. Roast in the oven for 10 minutes, then flip with a spatula and bake for another 8–10 minutes until golden brown.

Remove the granola from the oven, let it cool completely, and then transfer it to an airtight container for storage.
