This healthy granola is lightly sweetened, using whipped egg white or aquafaba for a crunchy texture instead of extra oil. It’s a versatile base that can be customized with your favorite nuts, seeds, dried fruits, or spices. A sugar-free version with erythritol is also possible, making it perfect for a guilt-free snack. Golden and crisp, it pairs wonderfully with yogurt, milk, or fruit bowls, and keeps fresh for several weeks in an airtight container.

Tips & Tricks (5)

  • Whip Egg White Magic 🥚
Whip the egg white to soft peaks before mixing with dry ingredients to create maximum crispiness and ensure even coating of the granola mixture.
  • Low and Slow Baking 🌡️
Bake granola at 300°F (150°C) and stir every 10-15 minutes to prevent burning and achieve uniform golden-brown color without scorching nuts or seeds.
  • Custom Nut Chopping Technique 🔪
Roughly chop mixed nuts by hand instead of using a food processor to maintain varied textures and prevent over-processing, which can lead to powdery granola.
  • Moisture Control Trick 💧
Let granola cool completely on the baking sheet before storing to prevent condensation, which can make your granola lose its signature crunch.
  • Flavor Layering Hack 🌿
Toast wheat bran and flaxseed separately before mixing to enhance their nutty flavors and activate their nutritional properties before combining with other ingredients.
