Blend the cottage cheese, honey, and peanut butter in a blender until smooth and creamy, with no lumps. Pit the dates, chop them, and fold them into the mixture.

Spoon the mixture into 3–4 popsicle molds and freeze for at least 3–4 hours, or until the popsicles are completely frozen.

Coarsely chop the chocolate and place it in a bowl. Melt it with the coconut oil in the microwave or in a double boiler. Dip the popsicles into the melted chocolate, place them back on the baking sheet, and let them set in the fridge for 5–10 minutes. Serve immediately or store in a suitable container in the freezer.
