Instructions
1
In a mixing bowl, combine almond flour, peanut butter, maple syrup, and salt. Stir until well combined. The mixture will be thick.
2
Roll the mixture into balls and place on a parchment-lined tray. Press down a bit to spread them into circles. Use your fingers to push the edges inwards on one end of each circle to create an egg shape. Place in the freezer for 20-30 minutes to firm up.
3
In a small bowl, combine chocolate chips and coconut oil. Microwave in 30 second intervals, stirring in between, until melted and smooth.
4
Remove peanut butter eggs from the freezer. Use a fork to dip each one into the melted chocolate, letting any excess drip off, then place back onto the parchment. If you have leftover chocolate after dipping the eggs, you can drizzle it over the eggs, ideally once the coating starts to firm up a few minutes after dipping.
5
Return to the freezer for 20 minutes for the chocolate to set. Let sit on the counter for a few minutes and enjoy!

Tips & Tricks (5)
- Chill Between Layers ❄️Refrigerate the peanut butter filling for at least 30 minutes before dipping in chocolate to prevent it from melting and losing its shape during the coating process.
- Temper Your Chocolate 🍫Melt dark chocolate chips slowly over a double boiler or in 20-second microwave intervals to maintain a smooth, glossy finish that sets properly without becoming grainy or dull.
- Balance Sweetness with Salt 🧂Add a pinch of sea salt to your peanut butter filling to enhance the chocolate flavor and create a sophisticated sweet-salty contrast that mirrors the original Reese's candy.
- Use Refined Coconut Oil 🥥Choose refined (not virgin) coconut oil to avoid any coconut flavor that might compete with the peanut butter and chocolate profile you're trying to achieve.
- Fork-Dipping Technique 🍴Use a fork to dip each egg into melted chocolate, tapping the fork gently on the bowl's edge to remove excess chocolate for a thin, even coating that sets quickly.
