Healthy Twix Bars (Paleo, Vegan)

These healthy Twix Bars are so fun and tasty! They have an almond flour shortbread crust, smooth homemade caramel sauce, and creamy dark chocolate coating. These homemade Paleo Twix bars are great for Halloween, birthdays, and dessert.

Ingredients

  • 1 ⅔ cups - almond flour
  • ½ cup - coconut flour
  • ½ cup - coconut oil
  • ⅓ cup - pure maple syrup
  • 1 tsp - vanilla extract
  • ⅔ cup - creamy nut butter
  • ¼ cup - coconut oil
  • ¼ cup - pure maple syrup
  • ½ tsp - vanilla extract
  • 1 tbsp - coconut oil
  • ¾ cup - dark chocolate chips

Instructions

  1. First, preheat oven to 350 degrees Fahrenheit. Line an 8 inch by 8 inch pan with parchment paper.
  2. Make shortbread layer first. Combine all ingredients in a mixing bowl. Stir to combine. Spread into one even layer in lined pan.
  3. Bake shortbread layer for 10 to 12 minutes or until middle is set and edges are slightly golden.
  4. Meanwhile, make the caramel. Add caramel ingredients to a skillet over medium heat. Bring to a light boil then simmer on low heat for 8 minutes, until thick and creamy. Stir constantly to prevent burning.
  5. Once shortbread layer has cooled for 10 minutes, pour caramel on top.
  6. Place pan in freezer for at least 30 minutes or until hardened.
  7. Then, melt chocolate chips and coconut oil in microwavable bowl in 30 second increments, until melted. Or, melt in a skillet over low heat. Pour over caramel layer.
  8. Place pan back in freezer for at least 30 minutes or until completely firm.
  9. Finally, remove pan from freezer. Cut into bars and serve!
