  • ½ pound - heart-shaped pasta
  • 2 tablespoon - unsalted butter
  •  Dash - olive oil
  • 3 cloves - garlic
  • 3 tablespoon - tomato paste
  • 1 shot - vodka
  • 1 cup - heavy cream
  •   - Salt
  •   - Black pepper
  • ½ cup - Parmesan cheese
  • ¼ cup - reserved pasta water

  1. Cook heart-shaped pasta in salted boiling water until al dente. Reserve 1/4 cup of pasta water and drain.
  2. In a skillet over medium heat, melt butter with a dash of olive oil. Add minced garlic and cook until fragrant, about 1 minute.
  3. Stir in tomato paste and cook until it darkens in color, about 2–3 minutes.
  4. Deglaze with vodka and cook for 1–2 minutes until the alcohol cooks off.
  5. Add heavy cream and bring to a gentle simmer for 7–10 minutes, stirring occasionally.
  6. Add grated Parmesan and season with salt and pepper. Stir until the sauce is smooth.
  7. Add cooked pasta and reserved pasta water. Stir well until fully combined and creamy.
  8. Top with more Parmesan before serving.
