Ingredients
- ½ lb - heart-shaped pasta
- 2 tablespoons - unsalted butter
- dash - olive oil
- 3 cloves - garlic
- 3 tablespoons - tomato paste
- 1 shot - vodka
- 1 cup - heavy cream
- Salt
- Black pepper
- ½ cup - grated Parmesan cheese
- ¼ cup - reserved pasta water
Instructions
- Cook heart-shaped pasta in salted boiling water until al dente. Reserve 1/4 cup of pasta water and drain.
- In a skillet over medium heat, melt butter with a dash of olive oil. Add minced garlic and cook until fragrant, about 1 minute.
- Stir in tomato paste and cook until it darkens in color, about 2–3 minutes.
- Deglaze with vodka and cook for 1–2 minutes until the alcohol cooks off.
- Add heavy cream and bring to a gentle simmer for 7–10 minutes, stirring occasionally.
- Add grated Parmesan and season with salt and pepper. Stir until the sauce is smooth.
- Add cooked pasta and reserved pasta water. Stir well until fully combined and creamy.
- Top with more Parmesan before serving.
