Ingredients

  • 1 lb - fingerling potatoes
  • 1 tbsp - olive oil
  • 1 tsp - sea or kosher salt
  • ¼ tsp - garlic powder
  • 1 tsp - Italian herbs

Instructions

  1. Preheat oven to 400 degrees.
  2. Toss the potatoes with the olive oil, salt, garlic powder and herbs on a sheet tray. Place all the potatoes cut side down for extra crispiness.
  3. Bake for 40 minutes or until the potatoes are golden on the exterior and tender inside.
  4. Serve.
