  • 20 ounce - chicken breast
  • 2  - sweet potatoes
  • 1 pound - Brussels sprouts
  •   - Salt
  •   - Black pepper
  • 1 tablespoon - honey

  1. Preheat oven to 425°F (220°C).
  2. Whisk together all marinade ingredients. Add sliced chicken and marinate for at least 30 minutes (longer is better).
  3. Line a baking sheet with parchment paper. Spread out Brussels sprouts and cubed sweet potatoes.
  4. Drizzle veggies with olive oil, season with salt and pepper, and roast for 25–30 minutes until tender and golden.
  5. While veggies roast, sear or bake marinated chicken until cooked through and lightly caramelized.
  6. Drizzle with 1 tbsp honey before serving, if desired.
  7. Divide chicken, sweet potatoes, and Brussels sprouts into 4 containers.
  8. Store in the fridge for up to 4 days.
