Instructions

Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin with cooking spray or olive oil.

In a large mixing bowl, whisk together the eggs and egg whites.

Add the chopped bell peppers, red onion, spinach, mushrooms, turkey bacon or sausage, garlic powder, onion powder, salt, and pepper.

Mix until well combined.

Pour the mixture evenly into 10 greased muffin cups.
