- 10 - eggs
- 1 cup - egg whites
- ½ cup - bell peppers
- ½ cup - red onion
- 1 cup - fresh spinach
- ½ cup - mushrooms
- ½ cup - turkey bacon or lean turkey sausage
- 1 tsp - garlic powder
- 1 tsp - onion powder
- Salt

- Cooking spray or olive oil
Instructions
- Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin with cooking spray or olive oil.
- In a large mixing bowl, whisk together the eggs and egg whites.
- Add the chopped bell peppers, red onion, spinach, mushrooms, turkey bacon or sausage, garlic powder, onion powder, salt, and pepper.
- Mix until well combined.
