- 1 lb - lean ground beef
- 4 - red potatoes
- ½ cup - fresh cheddar cheese
- 1 - white onion
- 1 - red bell pepper
- 1 tsp - garlic powder
- 1 tsp - onion powder
- 1 tsp - chili powder
- ½ tsp - cumin
- ½ tsp - smoked paprika
- 1 tsp - salt
- ½ tsp - pepper
- ½ cup - nonfat Greek yogurt
- ½ - avocado
- 1 - chipotle pepper
- 1 tbsp - adobo sauce
- ½ - juice of lime

Instructions
- Preheat oven to 400°F (200°C). Chop red potatoes into small cubes and season with salt, pepper, and olive oil. Roast for 20–25 minutes until golden and tender.
- While the potatoes roast, sauté chopped onion and bell pepper in a skillet until softened. Set aside.
- In the same skillet, cook ground beef until browned. Season with garlic powder, onion powder, chili powder, cumin, smoked paprika, salt, and pepper.
- In a blender or food processor, combine Greek yogurt, avocado, chipotle pepper, adobo sauce, lime juice, salt, and pepper. Blend until smooth.
