High Protein Burrito Bowl
Instructions

Preheat oven to 400°F (200°C). Chop red potatoes into small cubes and season with salt, pepper, and olive oil. Roast for 20–25 minutes until golden and tender.

While the potatoes roast, sauté chopped onion and bell pepper in a skillet until softened. Set aside.

In the same skillet, cook ground beef until browned. Season with garlic powder, onion powder, chili powder, cumin, smoked paprika, salt, and pepper.

In a blender or food processor, combine Greek yogurt, avocado, chipotle pepper, adobo sauce, lime juice, salt, and pepper. Blend until smooth.

To assemble each bowl, layer roasted potatoes, seasoned ground beef, and sautéed vegetables.
