In a bowl, mix together adobo sauce, pineapple juice, olive oil, apple cider vinegar, tomato paste, paprika, garlic powder, cumin, oregano, salt, and pepper.

Add chicken and toss to coat. Let marinate for at least 30 minutes (or overnight for more flavor).

Cook marinated chicken in a skillet over medium-high heat until browned and cooked through. Let rest and slice.

While the chicken cooks, mix all creamy chipotle drizzle ingredients in a small bowl. Add water if needed to thin.

To assemble bowls, divide cilantro lime rice, spring mix, and pickled onions into 4 bowls.
