So good and easy! Perfect for a high protein dinner and after a workout. The homemade guac was the perfect topping!

This High Protein Chicken Quesadilla is a perfect post-workout meal or meal prep staple. Made with tender chicken breast, sautéed red pepper, melted low-fat cheddar, and finished with a creamy avocado yogurt sauce, each bite is packed with flavor and nutrients. Quick to prep and satisfying to eat, this quesadilla is the ultimate balance of taste and macros.

Cook and shred the chicken breast.
In a skillet, sauté bell pepper until soft.
Mix chicken with hot sauce, Greek yogurt, and taco seasoning.
Warm a tortilla in a skillet, add half of the chicken mixture, peppers, and cheese. Fold in half.
Cook on both sides until golden and cheese is melted. Repeat for second quesadilla.
Slice and serve with avocado yogurt sauce.
