  • 1 pound - lean ground beef
  • ½ cup - non-fat cheddar cheese
  • 16  - Mission mini street taco tortillas (corn)
  • 1  - red bell pepper
  • ½  - red onion
  • 4 ounce - canned green chilies
  • 1 packet - low-sodium taco seasoning

  1. Preheat oven to 380°F or air fryer to 400°F.
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess fat if needed.
  3. Add taco seasoning, diced red bell pepper, red onion, and green chilies. Stir and cook for 3–5 minutes until softened and combined.
  4. Wrap 8 tortillas at a time in a damp paper towel, then foil, and bake at 350°F for 10 minutes to make them pliable.
  5. Once softened, fill each tortilla with the beef mixture and top with a small sprinkle of non-fat cheddar cheese.
  6. Fold and place in air fryer or on a baking sheet.
  7. Air fry at 400°F for 8–10 minutes or bake at 380°F for 20–25 minutes until golden and crispy.
  8. Let cool slightly before serving. Optional: serve with your favorite dipping sauce.
