These High-Protein Shredded Chicken Mini Tacos are crispy, flavorful, and perfect for meal prep or Taco Tuesday. Each taco features juicy shredded chicken, melted cheese, and a creamy, spicy yogurt-based sauce, all tucked into mini corn tortillas. They’re easy to assemble, quick to cook, and full of satisfying, macro-friendly flavor.

In a small bowl, whisk together Greek yogurt, mayonnaise, adobo sauce, lime juice, honey, salt, and pepper to make the sauce.
Lay out the tortillas and fill each with shredded chicken and shredded cheese.
Fold the tortillas into a taco shape and secure with toothpicks if needed.
Heat a skillet over medium heat and spray or drizzle with olive oil.
Pan-fry each taco for 2–3 minutes per side until golden and crispy.
Remove from heat, drizzle or serve with sauce, and garnish with chopped parsley.
Serve immediately or pack for meal prep.
