High-Protein Skyr Pancakes

First, mix all the dry ingredients together to make the batter. Then add the eggs, milk, and skyr and whisk until smooth. Finally, stir in the sparkling water.

Lightly brush a pan with oil, add some batter (about 2 to 2 1/2 tablespoons or 55 grams per pancake), and cook over medium heat for about one to two minutes. Depending on the size of the pan, several pancakes can be cooked simultaneously, leaving enough space between them.

Turn the pancakes over as soon as you can easily slide a spatula underneath them, then fry them again for about one to two minutes on the other side.

Repeat this process until all the batter is used up. The batter should yield approximately 12 skyr pancakes.
