5
Simmer until pasta is cooked and liquid is reduced by about half.

In a blender or food processor, combine cottage cheese, cream cheese, and a splash of reserved pasta water. Blend until smooth.
7
Pour the blended mixture and heavy cream into the pasta. Stir well to combine.

9
Optional: stir in mozzarella for extra cheesiness.
10
Serve topped with extra basil and cheese.

Tips & Tricks (5)
- Emulsify Cheese Mixture Separately 🧈Blend cottage cheese and cream cheese with a splash of reserved pasta water off-heat before adding to sauce to prevent curdling and achieve a silky, consistent texture throughout the dish.
- Brown Ground Beef for Depth 🥩Don't just cook the ground beef—let it caramelize in a dry pan first to develop a rich, complex flavor before adding aromatics, which intensifies the savory profile of your sauce.
- Use Bone Broth as Your Base 🦴Replace water entirely with bone broth to build umami depth and add collagen for a naturally velvety mouthfeel that enhances the protein content without extra cream.
- Reserve Pasta Water Strategically 💧Save generous amounts of starchy pasta water (1-2 cups) before draining to use as an emulsifier that helps bind the creamy cheese mixture with the tomato-based sauce for perfect consistency.
- Finish with Fresh Basil and Fat 🌿Toss fresh basil with a drizzle of quality olive oil directly before plating to preserve its bright aromatics and add a silky finish that complements the rich, protein-heavy sauce.
