- 3 tablespoons - butter
- dash - olive oil
- 3 cloves - garlic
- 4 tablespoons - tomato paste
- ½ lb - protein pasta
- cup - bone broth
- Salt
- Black pepper
- ½ tsp - garlic powder
- ½ tsp - onion powder
- ½ tsp - paprika
- 1 ½ cups - cottage cheese
- ½ cup - cream cheese
- ½ cup - heavy cream
- ½ cup - grated Parmesan cheese
- ½ cup - shredded mozzarella cheese
- handful - fresh basil
- 1 cup - cooked ground beef
- Reserved pasta water
Instructions
- In a large pan over medium heat, melt butter with a dash of olive oil.
- Add minced garlic and sauté until fragrant. Stir in tomato paste and cook until darkened.
- Add dry protein pasta and stir to coat. Pour in enough bone broth to just cover the pasta.
- Season with salt, pepper, garlic powder, onion powder, and paprika.
- Simmer until pasta is cooked and liquid is reduced by about half.
- In a blender or food processor, combine cottage cheese, cream cheese, and a splash of reserved pasta water. Blend until smooth.
- Pour the blended mixture and heavy cream into the pasta. Stir well to combine.
- Add Parmesan, basil, and cooked ground beef. Stir until everything is warmed through and creamy.
- Optional: stir in mozzarella for extra cheesiness.
- Serve topped with extra basil and cheese.
