Holiday Salad with Kale, Persimmon and Pomegranate

This Holiday Salad is as festive as it is delicious, and will add sparkle to any meal! It’s a tasty blend of hardy kale, sweet persimmon, pomegranate, feta cheese and toasted pecans tossed in a tangy, sweet apple cider vinegar dressing. Ingredients may be prepped in advance so you have time to enjoy the holidays!

Ingredients

  • 1 bunch - torn curly kale
  • ½ cup - pecan pieces
  • 1 - persimmon
  • 1 cup - pomegranate arils
  • 3 ounces - goat cheese
  • 6 tablespoons - extra virgin olive oil
  • ¼ cup - apple cider vinegar
  • 2 tablespoons - maple syrup
  • 1 tbsp - dijon mustard
  • salt

Instructions

  1. Wash the kale and tear it into pieces, then massage it in a large bowl following the instructions in my massaged kale salad. See note 1.
  2. Toast pecans on a rimmed baking sheet at 350 degrees for 8-10 minutes or until fragrant.
  3. Place the persimmon, pomegranate, goat cheese and pecans in the bowl with the prepped kale.
  4. Pour the desired amount of dressing over the salad and toss until well coated (you may not need it all). Serve and enjoy!
