
Holiday Salad with Kale, Persimmon and Pomegranate
This Holiday Salad is as festive as it is delicious, and will add sparkle to any meal! It’s a tasty blend of hardy kale, sweet persimmon, pomegranate, feta cheese and toasted pecans tossed in a tangy, sweet apple cider vinegar dressing. Ingredients may be prepped in advance so you have time to enjoy the holidays!

Ingredients
- 1 bunch - torn curly kale
- ½ cup - pecan pieces
- 1 - persimmon
- 1 cup - pomegranate arils
- 3 ounces - goat cheese
- 6 tablespoons - extra virgin olive oil
- ¼ cup - apple cider vinegar
- 2 tablespoons - maple syrup
- 1 tbsp - dijon mustard
- salt
Instructions
- Wash the kale and tear it into pieces, then massage it in a large bowl following the instructions in my massaged kale salad. See note 1.
- Toast pecans on a rimmed baking sheet at 350 degrees for 8-10 minutes or until fragrant.
- Place the persimmon, pomegranate, goat cheese and pecans in the bowl with the prepped kale.
- Pour the desired amount of dressing over the salad and toss until well coated (you may not need it all). Serve and enjoy!
