Homemade Ice Cream Sandwiches are a quick and easy dessert option that you can throw together before dinner and have ready when it is time for dessert. Truly easy, use the ingredients you have on hand to make a fun and fantastic ice cream treat that the whole family will love.

- Step 1
Put your toppings into individual bowls.
- Step 2
Turn a cookie upside-down and put a scoop of ice cream onto it.
- Step 3
Place another cookie on top, right-side-up, pressing gently.
- Step 4
Use a knife or icing spatula to even out any ice cream that has come out of the sandwich.
- Step 5
Roll into the topping of your choice.
- Step 6
If it doesn’t seem to stick, use your hand to press the topping onto the ice cream.

Place the finished ice cream sandwich on a cookie sheet covered with a piece of parchment paper.
- Step 8
Put in the freezer for 10-20 minutes to harden.
- Step 9
Store by wrapping each ice cream sandwich in a piece of parchment paper and place in a gallon freezer storage bag.
- Step 10
Store ice cream sandwiches for a few weeks.
- Step 11
When you are ready to have one, place it on a plate at room temperature for a few minutes before eating, as the cookies will be hard.
