Instructions
1
|
Cut the chicken breast into chunks and blend in a mixer with salt, pepper, garlic powder, and MSG until smooth. Oil your hands, divide the mixture into 3 equal portions, and shape into round patties. Place on a plate lined with baking paper and freeze for 1 hour to firm up.
2
|
In a bowl, mix flour, baking powder, salt, pepper, garlic powder, and MSG. Dredge the frozen patties in the flour mix. Add 200 ml cold water to the same bowl, stir into a smooth batter. Dip each patty into the batter and place straight into hot oil.
3
|
Fry the patties at heat level 8/9 for about 4 minutes, or until golden brown. Drain on paper towels.
4
|
Toast the burger buns. Spread McChicken sauce on the bottom bun, add shredded lettuce and pickle slices. Place the crispy chicken patty on top, then add more sauce if you like. Close with the top bun.

Tips & Tricks (5)
- Pound and Chill for Even Cooking 🔨Pound the chicken breast to uniform ¼-inch thickness and refrigerate for 30 minutes before breading to ensure even cooking and prevent dry edges.
- Double-Dredge for Extra Crispiness ✨Dip the breaded chicken in cold water, then coat again in the flour mixture for a thicker, crunchier crust that rivals the fast-food original.
- Oil Temperature is Critical 🌡️Maintain oil at 325-350°F using a thermometer; too hot burns the coating, too cool results in greasy, soggy chicken that absorbs excess oil.
- Toast Your Buns for Texture 🍞Lightly butter and toast the burger buns until golden to prevent sogginess from the sauce and add a subtle nutty flavor that elevates the sandwich.
- Layer and Balance Your Sauce 🧅Apply sauce to the bottom bun only to prevent oversaturation, and layer lettuce against the bun as a moisture barrier before adding the warm chicken patty.
