Cut the chicken into 6 equal pieces. In a bowl, mix buttermilk, pickle juice, chipotle, and all seasonings. Add the chicken, coat well, and marinate for at least 2 hours, the longer, the better.

In a separate bowl, mix flour, cornstarch, and all the same spices. Dredge each marinated chicken piece in the flour mix, dip back into the marinade, then coat again in flour for a double dredge.

Heat oil to 175–180 °C (medium-high). Fry the chicken pieces for 5–6 minutes until golden and crispy. Let rest on paper towels.

In a small saucepan, mix honey, chopped chipotles, water, and a pinch of the same seasonings. Warm over low heat until slightly thickened and glossy.

Mix mayonnaise, buttermilk, salt, pepper, garlic powder, and parsley until smooth and creamy.
