Tips & Tricks (5)
- Pat Dry for Perfect Searing 🎯Use paper towels to completely dry the pork chops before searing; this removes surface moisture that prevents browning and creates a better crust for flavor development.
- Minced Garlic vs. Whole Cloves ⏰Add minced garlic in the final 2-3 minutes of cooking to prevent burning; burnt garlic becomes bitter and will overpower the honey's sweetness in your sauce.
- Honey Temperature Control 🍯Warm honey slightly before adding to the broth to prevent it from clumping; cold honey can seize when hitting hot liquid and create uneven sweetness distribution.
- Bone-In Advantage ⏱️Choose bone-in chops when possible as they retain moisture better and conduct heat more evenly, resulting in juicier meat and superior flavor from the marrow.
- Reduce Sauce Actively 🔥After removing the pork, increase heat to high and let the sauce simmer for 3-4 minutes to concentrate flavors and achieve a glossy, coating consistency that clings to the meat.
