Tips & Tricks (5)
- Sear Before Pressure Cooking 🔥Use the Instant Pot's sauté function to deeply brown the sirloin beef on all sides before pressure cooking—this develops rich, complex flavors through the Maillard reaction that won't develop under pressure alone.
- Combine Broths for Depth 🍲Mix beef broth with French onion soup base rather than using them separately—this creates a more complex, restaurant-quality au jus with layered umami flavors that elevate the entire sandwich.
- Toast Rolls Before Assembly 🥐Lightly butter and toast the French rolls in a skillet or oven just before serving—this prevents them from getting soggy when dipped in au jus while adding a subtle, nutty crunch.
- Quick Pressure Release for Tender Meat ⏱️Use a quick pressure release after cooking to halt the cooking process immediately, preventing the beef from becoming overdone and tough—this is crucial for maintaining tender, melt-in-your-mouth texture.
- Reduce Sauce for Concentrated Flavor 💧After removing the meat, use the sauté function to simmer the au jus for 3-5 minutes to concentrate flavors and achieve a richer, more intense dipping sauce with better body.
