Mix almonds, egg whites, sugar and bitter almond flavoring in a bowl with a spoon or spatula to form a slightly moist, somewhat sticky dough.

Cover the bowl with cling film or a plate and refrigerate for 30 minutes.

Preheat the oven to 160°C (325°F) using conventional oven settings (top and bottom heat). Sift the powdered sugar into a deep plate.

Using a small ice cream scoop or a spoon, scoop out approximately 16 portions of roughly equal size and shape them into round balls with your hands.

Roll the dough balls in the powdered sugar and then briefly roll them between your hands again so that the powdered sugar is evenly distributed.

Place the dough balls side by side on the baking sheet and either gently flatten them or carefully press an almond kernel into each dough ball.

Bake the cookies in the oven at 160°C for 12 minutes. Then let them cool completely and store them in a cookie tin.
