Instructions
1
|
In a large bowl, combine flour, instant yeast, salt, and dried oregano. Add honey, melted butter, milk, and water. Mix until a dough forms, then knead for about 8–10 minutes until smooth and elastic.
2
|
Cover the dough and let it rise in a warm (not hot) place for about 1 hour, or until doubled in size.
3
|
Divide the dough into 4 equal pieces. Shape each piece into an oval sandwich-bread shape and place them on a lined baking tray.
4
|
Let the shaped dough rest for about 20–30 minutes. Before baking, score each loaf with 4 shallow slashes. Sprinkle generously with Parmesan and oregano.
5
|
Place a small oven-safe dish with water on the bottom of the oven to create steam.
6
|
Bake at 190°C (375°F) for 20–22 minutes, until golden brown and baked through.
7
|
Remove from the oven and let cool slightly before slicing.

Tips & Tricks (5)
- Bloom Your Yeast in Warm Milk 🥛Dissolve instant yeast in warm milk (110°F) with honey for 5 minutes before mixing to ensure maximum fermentation activity and a lighter, airier crumb structure.
- Toast Dried Oregano in Butter 🧈Gently heat your dried oregano in melted butter for 1-2 minutes before adding to the dough to unlock its essential oils and intensify the Italian herb flavor throughout the bread.
- Save Parmesan for the Top Layer 🧀Mix only half the Parmesan into the dough and sprinkle the rest on top after the final proofing to create that signature crispy, golden, flavorful crust that mimics authentic Subway bread.
- Achieve the Perfect Crumb with Steam 💨Place a shallow pan of boiling water on the lower oven rack during baking to create steam that develops a light crisp exterior while keeping the interior exceptionally soft and tender.
- Proof Dough Until Finger Poke Test Passes ⏱️Poke the proofed dough gently; if the indentation springs back slowly (not immediately), it's perfectly proofed—this prevents dense bread and ensures optimal rise in the oven.
