Ingredients

  • 2 tablespoons - Olive Oil
  • ¾ cup - Onions
  • 3 cloves - Garlic
  • ¾ cup - Carrot
  • ½ cup - Green Beans
  • ¾ cup - Celery
  • 1 tsp - Oregano
  • 1 tsp - Thyme
  • 2 - Ripe Tomatoes
  • 1 cup - Kidney Beans
  • 1 tsp - Salt
  • 1 tsp - Black Pepper Powder
  • ½ tsp - Red Pepper Flakes
  • 4 cups - vegetable broth
  • 1 - Bay Leaf
  • ½ cup - Elbow Pasta
  • ½ cup - Basil
  • Cilantro

Instructions

  1. Heat olive oil in a pan; add onion followed by garlic, and sauté for a few seconds on high flame until the onion begins to brown slightly.
  2. Add carrots, green beans, celery, oregano, and thyme, and stir to combine.
  3. Next add tomatoes, kidney beans, salt, black pepper, and chili flakes, and cook on medium flame until tomatoes turn a little mushy.
  4. Add broth and bay leaves, cover, and let it simmer for 20 minutes.
  5. Stir in pasta and cook for 6 to 7 minutes, stirring occasionally. Add chopped basil and switch off the heat.
  6. Sprinkle chopped cilantro on top; serve hot and enjoy!
