Tips & Tricks (5)
- Score the Fat Cap Properly 🔪Make shallow crosshatch cuts through the skin and fat layer before seasoning to allow the porketta spices to penetrate deeply and help render the fat during roasting for crispy edges.
- Season and Rest Overnight 🕐Apply your porketta seasoning, salt, and pepper 12-24 hours before cooking to allow the flavors to cure into the meat, resulting in significantly more complex, developed taste throughout.
- Use a Meat Thermometer for Perfect Doneness 🌡️Pull the roast at 145°F internal temperature for juicy, slightly pink meat that stays tender; overcooking past 160°F will dry out this lean cut considerably.
- High-Heat Sear, Then Low-Heat Roast 🔥Sear all sides in a hot skillet for 2-3 minutes per side to develop a flavorful crust, then finish in a 325°F oven to cook gently without drying out the interior.
- Reserve Pan Juices for Maximum Flavor 🥘After resting the meat, deglaze your skillet with broth or wine to capture all the browned bits and caramelized porketta seasoning, creating an incredible pan sauce to serve alongside roast potatoes.
