Instructions
1
Preheat oven to 350°F (180°C). Line a cookie sheet with parchment paper.
2
Sift the almond flour, oat flour, baking soda, and salt into a medium mixing bowl. Stir in the melted coconut oil, maple syrup, and vanilla and almond extracts until a thick dough forms.
3
Roll tablespoon sized portions into balls. Use your thumb or the rounded back of a teaspoon to gently press two indents in the center of each cookie dough ball to make heart shapes. Spoon about a teaspoon of jam into each heart thumbprint, filling each indent to the brim.
4
Carefully transfer onto the prepared cookie sheet, placing about 2 inches apart.
5
Bake for 13 minutes. Let cool and enjoy!

Tips & Tricks (5)
- Chill Dough for Perfect Thumbprints 🧊Refrigerate the dough for at least 30 minutes before shaping to prevent spreading and ensure clean, defined jam indentations that hold their shape beautifully.
- Toast Almond Flour First ✨Lightly toast your almond flour in a dry pan for 2-3 minutes before mixing to deepen its nutty flavor and reduce any raw almond taste in the final cookie.
- Warm Jam for Better Filling 🍓Gently warm your jam for 10 seconds in the microwave before filling to make it flow smoothly into the thumbprints and prevent it from sinking during baking.
- Use Room Temperature Coconut Oil 🥥Ensure coconut oil is slightly softened but not melted for optimal creaming with the dry ingredients, which creates the shortbread texture without overmixing.
- Fill After Baking, Not Before ⏱️Create thumbprints before baking, but add jam in the final 2 minutes of baking or immediately after removal to prevent burning while keeping it warm and set.
