Instructions

Rinse quinoa well under cool water.

Add prepared quinoa and water to a small saucepan and bring to a boil. Reduce to simmering, and cook for 15 minutes. Place lid on top and allow to sit off the heat for 5 minutes.

Remove from heat; fluff quinoa with a fork and set aside while you make the rest of the salad.

In a medium bowl, stir together chickpeas, cucumber, red onion, feta cheese, parsley, mint and pistachios.

Gently fold in the prepared quinoa.

In a small bowl, whisk together the olive oil, lemon juice, and all-purpose seasoning until combined.

Pour dressing over salad and gently toss until completely combined.

Serve immediately or store in an airtight container in the refrigerator for up to three days.
