Ingredients
- 1 cup - quinoa
- 2 cups - water
- 15 ounces - chickpeas
- 1 cup - cucumber
- ½ - red onion
- ½ cup - feta cheese
- ½ cup - parsley
- ½ cup - mint
- ¼ cup - pistachios
- ¼ cup - olive oil
- 1 - lemon
- ½ tsp - all-purpose seasoning
Instructions
- Rinse quinoa well under cool water.
- Add prepared quinoa and water to a small saucepan and bring to a boil. Reduce to simmering, and cook for 15 minutes. Place lid on top and allow to sit off the heat for 5 minutes.
- Remove from heat; fluff quinoa with a fork and set aside while you make the rest of the salad.
- In a medium bowl, stir together chickpeas, cucumber, red onion, feta cheese, parsley, mint and pistachios.
- Gently fold in the prepared quinoa.
- In a small bowl, whisk together the olive oil, lemon juice, and all-purpose seasoning until combined.
- Pour dressing over salad and gently toss until completely combined.
- Serve immediately or store in an airtight container in the refrigerator for up to three days.
