I’ve been really into Swiss chard lately and would LOVE to have made this with Swiss chard but I simply couldn’t find any :/ So, we’re using kale instead. This recipe is super easy! Just steam some kale and then toss it in with some sautéed onion and garlic and pour beaten eggs over top. Then bake it for about 10 minutes and you’re done!

Tips & Tricks (5)
- Massage & Dry Your Kale 🥬After steaming, massage the kale with a paper towel to remove excess moisture, preventing a watery frittata and ensuring better texture integration with the eggs.
- Pre-Cook Aromatics Separately 🧅Sauté garlic and onion until deeply caramelized before adding kale—this concentrates their sweetness and prevents raw garlic harshness in your finished dish.
- Temper Your Eggs with Heat 🥚Before pouring beaten eggs over hot ingredients, slowly add a spoonful of the warm kale mixture to your eggs while whisking to prevent them from scrambling on contact.
- Finish Under the Broiler 🔥In the final 2 minutes of baking, switch to your broiler for 30 seconds to create a delicate golden top while keeping the interior creamy and custardy.
- Season the Eggs, Not Just the Pan 🧂Salt and pepper your beaten egg mixture directly before cooking rather than seasoning only the vegetables—this ensures even flavor distribution throughout every bite of the frittata.
