Ingredients

  • 1 bunch - curly kale
  • 1 tbsp - olive oil
  • 1 - navel orange
  • 2 - green onions
  • ½ cup - crumbled goat cheese
  • ⅓ cup - dried cranberries
  • ⅓ cup - toasted pepitas
  • ½ cup - extra virgin olive oil
  • 2 teaspoons - orange zest
  • ¼ cup - fresh orange juice
  • 2 tablespoons - fresh lemon juice
  • 1 tbsp - dijon mustard
  • 1 tbsp - honey
  • ¼ tsp - sea salt
  • ⅛ tsp - black pepper

Instructions

  1. Place the kale in a large bowl. Add the tablespoon of olive oil and massage it into the kale until the leaves are tender, about 1-2 minutes.
  2. Add the orange, green onions, goat cheese, cranberries and pepitas to the bowl, then add the desired amount of dressing and toss to coat. Serve immediately and enjoy!
